Meet Our Executive Chef!
Nicole Craft nurtured her passion for flavors and ingredients in her hometown of Oklahoma City, where she worked in local cafés while growing up. In 2006, her passion for food and travel led her to Barcelona where she studied regional cuisine while working in a restaurant that sourced almost all of its ingredients locally. From these significant experiences in her early career, Craft upholds the values of sourcing the highest quality of ingredients from local purveyors and growers, working seasonally and intentionally. For Craft, food should be a holistic experience that incorporates creativity, complexity of flavor, storytelling, and pure pleasure. Most recently, Craft led the kitchens at both Hideaway TriBeca and Hideaway Seaport, an upscale gastropub eatery. She has also gained significant experience at Bar Tartine, Roberta’s Pizza and Spotted Pig. Craft moved to Ghent, NY in March of 2018 with her daughter, Willow and couldn’t be more excited to be part of the community. Today, she fervently leads the kitchen at Bartlett House with an enthusiastic and collaborative spirit, utilizing the bounty of the Hudson Valley to create modern dishes inspired by classic recipes.
